Abstract:
Provided is an oil-in-water type emulsion composition in which the emulsification is stabilized by pea protein and/or fava protein and sucrose fatty acid esters so as to achieve excellent stability during distribution. Use is made of an oil-in-water type emulsion composition that comprises water, a fat or oil, pea protein and/or fava protein and sucrose fatty acid esters, wherein: the ratio of sucrose fatty acid monoesters contained in the sucrose fatty acid esters is 3-45 mass% relative to the total sucrose fatty acid esters; and the amount of the sucrose fatty acid esters is 1-30 parts by mass per part by mass of the total amount of the pea protein and fava protein.
