Provided is an oil-resisting agent by which the foam generated in an aqueous dispersion comprising a fluorine-containing copolymer is controlled, even when the aqueous dispersion is used after having been continuously circulated for a long period of time, according to a precise testing method. Also provided is a method for producing an oil-resistant paper using the oil-resisting agent. The oil-resisting agent is formed from an aqueous dispersion comprising an aqueous medium and a fluorine-containing copolymer dispersed in the aqueous medium and is used for treatment of paper or pulp, wherein the oil-resisting agent is characterized by the following: the fluorine-containing copolymer being a fluorine-containing copolymer having 50 to 95 mass% of units derived from a (meth)acrylate having C1-6 polyfluoroalkyl groups; the defoaming parameter being 500 mL or less as measured on the basis of a defoaming test method using an aqueous dispersion test liquid which is obtained by diluting the aqueous dispersion with water such that the concentration of the fluorine-containing copolymer becomes 0.1 mass%; and the concentration of a defoaming agent in the aqueous dispersion being less than 1,000 ppm.
