Abstract:
[Problem] To provide: a packaged beverage including koji extract for which the occurrence of an aged smell is inhibited, and the enzymatic activity of which is maintained; and a method for preserving koji extract. [Solution] This packaged beverage includes koji extract, wherein the internal pressure of carbon dioxide gas at 20°C is 0.03 MPa or more.
