Abstract:
A pasteurized and packed beverage containing albumen proteins, wherein: the content of the albumen proteins is 2 g or more per 100 ml of the beverage; the viscosity of the beverage is 600 mPa⋅s or less; and the band value of ovalbumin after treating a sample with pepsin amounts to 20% or more of the band value of the sample before the pepsin treatment, said band values being obtained by performing a preset treatment and then measuring with a densitometer. According to the present invention, a pasteurized and packed beverage, which is capable of supplying high-quality proteins and imparting a long-lasting feeling of satiety, and a method for manufacturing the pasteurized and packed beverage can be provided. Thus, a pasteurized and packed beverage of a new type which is useful for health promotion and a method for manufacturing the same can be provided.
