Abstract:
In this invention, a pectic polysaccharide is demethoxylated, without acid or alkali treatments, by treating with an enzyme that includes an amino acid sequence coded by a base sequence having at least 65% sequence identity with the base sequence set forth in SEQ ID NO: 1, or with an enzyme that includes an amino acid sequence having at least 65% sequence identity with the amino acid sequence set forth in SEQ ID NO: 2.
