Abstract:
The purpose of the present invention is to provide a manufacturing method of a plant-based cheese-like food with enhanced umami similar to cheese made from animal ingredients. This plant-based cheese-like food manufacturing method is characterized by subjecting vegetable protein-containing raw ingredients to the action of nuclease and then acidifying.
