Abstract:

[Problem] To provide: a plastic fat composition which is capable of providing a plastic fat food that retains adequate meltability in the mouth after long-term storage, while being excellently easy to apply and having good filling workability and excellent oil-off resistance and the like; and a method for producing the plastic fat composition. [Solution] A plastic fat composition which has a PPP content of 5.5-12% by weight, a PPLi + PLiP content of 5.5-15.5% by weight, a PPO + POP content of 7-20% by weight and a PPO/(PPO + POP) ratio of 0.55-0.7. This composition is produced, for example, by mixing (1) 10-80 parts by weight of a fat or oil A that is derived from a transesterified oil of a liquid oil and a palm oil having an iodine number of 65 or less and has a PPLi + PLiP content of 7.5-17.5% by weight with (2) 0-50 parts by weight of a fat or oil B that is derived from a transesterified palm oil and has a PPO + POP content of 15-30% by weight and a PPO/(PPO + POP) ratio of 0.55-0.7 and (3) 0-70 parts by weight of a liquid oil.
