Abstract:
A method and a device for removing ribs from a sirloin/rib portion in which the work of removing the ribs from a sirloin/rib portion is fully automated and carried out as a consecutive operation without lowering the yield of meat adhering to the ribs as compared with manual work. The method for removing ribs comprises a step of inserting a sirloin/rib portion (a) between a work table surface (1) and a reference rod (2) arranged above the work table surface (1) and then positioning the sirloin/rib portion (a) fixedly by lowering the reference rod after aligning the distal end face (d) of rib gristle with the reference rod (2), a step of measuring the position of a rib (c), a step of making a cut in the periphery of the distal end face of the rib gristle by swinging a cutter (21) having a circular or U-shaped edge while maintaining the fixed position after the positioning step, a step of hooking a U-shaped string fixed to an swingable arm to the cut, and a step of separating the meat from the rib surface by pulling the string.
