Abstract:
Provided is a powder that contains monosaccharides and disaccharides in an amount as small as possible and has an effect of enhancing a milky flavor and rich taste. A powder, which is prepared from a mixture of starting materials comprising fat, milk protein and a filler, characterized in that the aforesaid mixture of starting materials is heated so that the total amount of monosaccharides and disaccharides in the powder becomes smaller than the total amount of the monosaccharides and disaccharides in the mixture of starting materials before heating.
