Abstract:
Provided is a powder mix containing a soluble pectin which is easily soluble in cold water at approximately 5°C. The powder mix comprises a pectin wherein the calcium content of the pectin is adjusted to 500 ppm or less. The cold water solubility of the pectin is further enhanced by adjusting 80 mass% or more of the pectin to have a particle diameter of 150 μm or less, or by dissolving the pectin together with one or more types of sodium salt, potassium salt, and magnesium salt.
