Abstract:
Provided is a process for producing a powdered black tea which is enriched in nonpolymeric catechin compounds and has rich black tea flavor and reduced bitterness.
This process for producing a powdered black tea comprises blending a dried black tea extract having a ratio of the content of nonpolymeric catechin compounds to the content of tannin of 0.25-0.9 by mass with a dried green tea extract having a ratio of the content of nonpolymeric catechin components to the content of tannin of 0.83-1.3 by mass in such a manner that the ratio of the content of the nonpolymeric catechin compounds to the content of tannin in the finished product becomes 0.67-0.9 by mass.
