Abstract:
The present invention addresses the problem of providing a powdery oil or fat composition for confectionery and bread production use, which, when used singly or together with a liquid oil and/or a solid fat, enables the production of a confectionery or bread having the same level of quality or a higher level of quality compared with confectioneries and bread produced using only the conventional solid fats. The present invention is a powdery oil or fat composition for confectionery and bread production use, which comprises a powdery oil or fat composition that meets the requirement (a): (a) the composition is a powdery oil or fat composition which contains an oil or fat component containing at last one XXX-type triglyceride, wherein the XXX-type triglyceride is a compound that has, at position-1 to position-3 of glycerin, a fatty acid residue X having x carbon atoms, the number x of carbon atoms is an integer selected from 10 to 22, the oil or fat component contains a β-type oil or fat, each of particles of the powdery oil or fat composition has a plate-like shape, and the loose bulk density of the powdery oil or fat composition is 0.05 to 0.6 g/cm3.
