Abstract:
A method for producing a powdery seasoning, characterized by comprising hydrolyzing a protein material with liquid koji mold, which has been cultured in a medium containing milled wheat bran passing a 0.3 mm-mesh sieve, and then spray-drying the hydrolysate without removing solid matters after the hydrolysis. In the aforesaid method for producing a powdery seasoning, the hydrolysate can be spray-dried as such without requiring a step for removing solid matters after the hydrolysis by, for example, squeezing or filtering. According to this method, moreover, a powdery seasoning, which is more stable during storage than a conventionally known powdery seasoning that is obtained from a seasoning liquor comprising a protein hydrolysate, can be obtained.
