Abstract:
Technical sector: Food Preparation, in paste form, for concentrated vegetable drink. Concentration is the mail preparation's feature as it allows reducing packaging by 10 times, with all consequent ecological, logistic and convenience advantages. One small can replaces10 litre cartons. Further feature is the total lack of chemical additives notwithstanding the preparation's long shelf life outside the refrigerator. Finally, but possibly the most interesting feature, unlike tablet supplements, there is the consumer's possibility of taking various vitamins, minerals and enzymes in a very natural way, at any time of the day, with a very high absorption rate, due to the fact that all nutrients are taken during the natural digestion process, when the body is susceptible to better absorption. A preparation's spoonful diluted in hot water becomes a vegetable milk and at the same time a portion of fruit, vegetables and phytotherapy herbs.

Claims:
CLAIMS

1) Paste preparation, highly concentrated for beverage, completely vegetable, as a substitute of milk, containing in particular, dried fruit (weight from 25% to 50%, with respect to the total weight of the product); Freeze-dried fruit and/or vegetables (weight from 7% to 25%, with respect to the total weight of the product); A vegetable syrup, a sugar substitute, (weight from 20% to 40%, with respect to the total weight of the product); Vegetable lecithin (weight from 5% to 15%, with respect to the total weight of the product); vegetable fat (weight from 3% to 20%, compared to the total weight of the product); roots, spices, freeze-dried or dried and pulverized phytotherapeutic herbs, selected seeds from pumpkin, sesame, flax, chia, poppy, hemp and salt or a mixture of the same ( weight from 2% to 20%, with respect to the total weight of the product); without the addition of chemical substances such as preservatives and/or colorants.

2) Preparation according to claim 1, in a particular composition of dried fruit, (weight, from 35% to 45% with respect to the total weight of the preparation); freeze-dried vegetables (from 10% to 15%, in weight, with respect to the total weight of the preparation); vegetable syrup preparation (from 20% to 30% in weight, with respect to the total weight of the); vegetable lecithin preparation (from 5% to 10% in weight, with respect to the total weight of the preparation); seeds, spices, roots, phytotherapeutic herbs, salt (from 10% to 15% in weight, with respect to the total weight of the preparation); vegetable fat (from 3% to 5% in weight, with respect to the total weight of the preparation)

3) Preparation according to the previous claims wherein the freeze-dried vegetables and/or fruit are selected from: carrots of various colours, apples, pears, persimmons, grapes, pineapples, beets, wild berries, cherries, sweet and non-sweet potatoes, avocados, mango, papaya, banana, pea, fennel, celery, tomato, chestnut, figs and cocoa are a fundamental component, because they allow a high concentration of the paste preparation and an excellent natural colouring.

4) Preparation according to the previous claims, in which the freeze-dried or dried and pulverized phytotherapeutic herbs, spices, roots are selected from among turmeric, cinnamon, coffee, pepper, moringa, spirulina, cardamom, citrus zest, vanilla, truffle, saffron, anise incense, liquorice, chamomile, echinacea, pumpkin seeds, sesame, flax, chia, hemp, poppy. 5) Preparation according to the previous claims, with a natural vegetable fat such as sunflower seed oil, hemp seed oil, dried fruit oil, linseed oil, chia seed oil, rice oil, coconut oil, shea butter or cocoa or mixture thereof.

6) Preparation according to claims from 1 to 5, wherein the vegetable syrups are selected for their fluidity, among agave, maple, stevia, rice or their mixture with the common characteristic of not creating a glycaemic peak and providing a low calorie content; in a specific configuration the vegetable syrup may not be present, compensating it with the proportional increase of freeze-dried fruit and/or vegetables, choosing them among those naturally sweeter, such as apples and/or grapes, figs, persimmons, bananas and vegetables such as carrots and/or sweet potatoes or a mixture thereof.

7) Production method according to claims 5 and 6, comprising a first cold mixing phase, during which the dried fruit are minced and blended until obtaining a butter, then are combined with vegetable fat and lecithin and vegetable syrup, ( in the case of the sweet version); and a second mixing where the freeze-dried vegetables already mixed together and already combined with the spices, herbs, freeze-dried roots and/or mixture of the same, sieved a first time, with a fine mesh filter are incorporated, in a cold and slow process whirling as little as possible; sieving the produce a second time at the same time as the ingredients are incorporated into the fluid mixture so as to avoid mixing it for a long time; this way the final mixture will be easily soluble.

8) Method according to claim 7 wherein the paste preparation is defined according to one of claims I to 6.

9) Production method according to claims 7 and 8 including a first cold mixing phase, during which the minced and blended dried fruit to obtain a butter, is combined with the vegetable fat and the lecithin and the vegetable syrup (in the case of the sweet version); and a second mixing phase where the freeze-dried vegetables, already mixed together and already combined with the spices, herbs and roots, freeze-dried and sieved once, with a fine mesh filter, are slowly incorporated, turning as little as possible; sifting them a second time at the same time as they are added to the fluid mixture, stirring until the lumps dissolve; thus obtaining an easily soluble final mixture.

Title

Preparation in paste for concentrated vegetable drink

Technical area.

The present invention relates to: an ecological paste preparation for a vegetable drink, to a method of preparing a paste preparation and to the method of use for the preparation of the vegetable drink as a substitute for milk.

Background of the invention.

The vegetable drinks available on the market used to replace milk, have a water content equal to 95% to 98% of the total weight. They contain thickeners, preservatives, sugars and chemical additives. Their bulk is bothering in the kitchen and weighs in the shopping bag. Their healthiness is doubtful, due to the content of chemicals and the use of sugars.

The dried fruit content declared in large letters on the package is often a few grams per litre.

Packaging creates a lot of waste of various kinds, takes up space in warehouses and increases transport costs. Once the package is opened, it must be consumed within a few days and kept in the refrigerator.

My preparation is a concentrated paste of fruit and vegetables contained in a small jar which only with the addition of hot or cold water becomes a drink of more than 10 times its volume.

The concentrated vegetable paste is completely natural, without additives and does not necessarily have to be kept in the refrigerator, even after opening, it is ecological due to its ingredients and is produced, marketed, packaged with a method with very low environmental impact.

In addition, it is very beneficial for health, because it consists exclusively of fruits and vegetables, with the addition of high-quality vegetable fat and phytotherapeutic herbs, freeze-dried or dried roots and spices.

The purpose of this invention is to provide a concentrated paste preparation, free of water, to avoid the formation of mold and have no need of preservatives. Flavoured with spices, beneficial for health is composed of dried fruits and vegetables, already very tasty and colorful, so it does not need flavours and chemical pigments.

The composition is formed by the union of dried fruits, first chopped, then cold emulsified until obtaining a cream, vegetable fat, to increase fluidity and density, a sweetener, optional, natural fluid such as agave syrup or maple or rice or the union of the same, vegetables and freeze-dried fruits such as carrot or pumpkin or pineapple or coconut, sweet potato, apple, pear, persimmon, grapes, fig, banana, papaya, mango, pea, beet, vegetable lecithin of sunflower, or soy or, peanut to mix fats.

The vegetable drink (vegetable milk) obtained with 22 gr. corresponding 2 teaspoons of pasta and the desired amount of water (2OO /25Ogr= 1 cup) is customizable, because the intensity of the taste, the amount of calories and proteins can be decided to everyone's taste as for coffee "short" or "long", something that cannot be done with commercially available drinks as they are already very diluted. If you want foam just use a milk frother.

Summary

According to the present invention, a concentrated paste preparation and the method for making a concentrated paste preparation is provided. As cited therein in the independent claims that follow and, preferably, in any of the claims directly or indirectly dependent on the independent claims.

Detailed description.

In accordance with a first portion of the present version, a concentrated paste preparation is provided which, with the simple addition of hot or cold water, becomes a healthy vegetable and protein drink, alternative to milk.

The preparation is composed from 25% (in particular 30%) to 50% (in particular 36%) in weight, with respect to the total weight of the preparation, of dried fruits. From 20% (in particular 20% to 30%) to 40% in weight, with respect to the total weight of the preparation, of fluid sweetener (agave juice, maple juice, rice syrup, stevia drops or a mixture thereof).

The preparation also contains freeze-dried fruit and/or vegetables among the following or a mixture of the same (yellow carrot, carrot of various colours, pumpkin, beetroot, chicory, cocoa, coconut, pineapple, blueberry, in a percentage, with respect to the total weight of the product, in concentrated paste, ranging from 7% (in particular from 10% to 15%) up to 25% by weight, with respect to the total weight of the preparation.

Beneficially, as a further component, at least 5% of lecithin is combined with the others (in particular from 5% to 10%) to 15% in weight, with respect to the total weight of the preparation. According to specific methods of production, vegetable fat (sunflower, hemp, coconut, almond, hazelnut, walnut, cocoa butter, shea butter) (from 3% to 15% by weight, with respect to the total weight of the paste preparation) is added or as an alternative to the previous ones.

Valuably, further components of at least 2% of freeze-dried spices, herbs and phytotherapeutic roots (cinnamon, turmeric, echinacea, coffee, matcha tea, chai tea, chamomile, moringa, elderberry), seeds and salt (from 10% to 15%) up to 20% of the weight with respect to the total weight of the preparation, are added to the preparation.

It should be noted that freeze-dried vegetables, in quantities ranging from 10% to 25% of the total weight of the finished product, when rehydrated with water for the preparation of the drink, will obtain a result comparable to eating five carrots in a single glass with the relative intake of fiber, vitamins and antioxidants.

Lecithin allows the various ingredients to bind together, and it must be of vegetable origin (sunflower, soy, peanuts)

The oil gives body and rounds off the taste of the final product.

Dried fruits, in addition to providing vitamins and mineral salts, give an excellent aroma and body to the drink, also providing fiber and proteins, thus allowing to claim it is a protein drink, vegetable and without added sugar and ecological.

According to some methods of making the preparation, the fluids are firstly carefully mixed and then the powders are added and then everything is cold mixed, to keep the vitamins and micronutrients unaltered.

The dried fruits must be minced vigorously with a whisk for a long time, until the oil, which is naturally contained in it, comes out, and until it takes on the consistency of butter.

Then the oil is added, finally the fluid sweetener.

In another container, the previously freeze-dried vegetables and/or fruit must be finely pulverized, then sieved and finally mixed with the spices, roots and herbs.

Only after having prepared the two carefully mixed mixtures, fluids and powders are combined, together with the lecithin with a quick cold and low speed mixing.

Finally, it is important to combine the two compounds at low speed, without incorporating air and only for the time necessary to remove any pieces that may develop. It is possible to filter well the powders a second time while pouring the fluids into the mixture, so as not to form lumps and not have to mix for a long time. In this way the paste remains fluid, light and easily soluble in hot water.

The use of a part of freeze-dried fruit and vegetables encourages the solubility of the preparation and allows the organoleptic properties to be kept almost intact, if the freeze-drying process is done correctly, i.e. the elimination of water to allow the unaltered conservation of the ingredients without addition of preservatives, colorants and chemical additives.
