Abstract:
Provided are an antioxidant peptide and a preparation method therefor. In the method, black shark skin is used as the raw material, enzymolysis of an alkaline protease is used, and isolation and purification are performed to obtain a specific antioxidant peptide having a molecular weight of 500 Da and an amino acid sequence of Gly-Ala-Ala-Val-Ala-Leu. The method overcomes the defects of natural antioxidants and eliminates worries of the public for artificially synthetic antioxidants, thereby laying theoretical foundations for developing an antioxidant peptide based on a food source and exploring wide application thereof in food and medicine.
