Abstract:
An process for food preservation comprises the following steps: placing the food into vacuum chamber, vacuumizing the chamber to 10,000-­3,000 Pa, injecting free radical of hydroxyl anion, and keeping vacuumizing until 8,000-800 Pa, then putting the food into a preservation canopy which has a soft wall and has been sterilized, vacuumizing the canopy so as to lower the level of oxygen, and injecting carbon dioxide, finally placing the canopy in refrigerated warehouse. The apparatus includes a vacuum chamber which has refillers for injecting free radical of hydroxyl anion, a preservation canopy which has a soft wall, a door and a valve for vacuum pumping, and a refrigerated warehouse.
