Abstract:

A process for obtaining 3'-epilutein by epimerization of an extract containing lutein with a strong organic acid aqueous solution that is slowly added under agitation at ambient temperature in the presence of an organic aprotic medium with the purpose of obtaining 3'-epilutein (crystals) in a solution that is neutralized with an alkali and extracting the 3'-epilutein from said solution using an organic medium. The crystals are washed and dried and then purified by chromatography using a chromatography column.
