Abstract:
According to the invention, Applicants have identified a clarification process which is simple and quick and provides a protein isolate of greater than 90% whey protein which may then optionally be further purified to select out individual proteins. The process involves a number of steps, in order of which is critical, and novel lipid removal techniques to achieving the highly pure and clarified protein isolate of the invention.
