Abstract:
At least one member selected among starch, maltoligosaccharides having a higher degree of polymerization than maltose, and dextran is provided as a starting material. At least one enzyme selected among various 'alpha'-amylases, oligosaccharide-producing amylases, 'beta'-amylases and branching enzymes and another enzyme which can produce nigeroligosacchalide upon transglycosylation-condensation are successively or simultaneously allowed to act on the starting material to produce a nigeroligosaccharide, which is then optionally reduced to prepare a starch sugar composition comprising the nigeroligosaccharide or a reduction product thereof. The starch sugar composition, when incorporated as at least a part of a sweetener into foods and drinks, can sweeten the foods and drinks and, in addition, can offer various effects such as an improvement in sweet taste and an improvement in moisture retention.
