Abstract:
A process for preparing water-absorbing rice whereby water absorption by rice, which has not been completely gelatinized, can be quickly and uniformly achieved. Rice having been immersed in water is poured into an aqueous solution and subjected to jumping heating whereby individual rice grains are circulated while jumping up and down. Then the rice is put into a container or an airtight container together with the aqueous solution and covered or closed (in case of the airtight container) followed by cooling. By heating the water-absorbing rice thus obtained in a microwave oven, etc., uniform rice having a fresh-cooked smell and being free from any hard mass can be provided.
