Abstract:
A process for producing amazake (a slightly alcoholic, sweet drink made from fermented rice) cheese, which comprises mixing milk with amazake, fermenting at 40oC for 6 to 18 hours to prepare yogurt containing amazake rice particles, removing a particulate composition from this yogurt, fermenting milk using this yogurt as mother starter yogurt, and removing whey to prepare amazake cheese. This cheese has less sourness and is pleasant to the palate and, as with conventional cheese, can be utilized for process cheese, etc.
