Abstract:
The proposed process for producing bread from whole grain involves the use of rye grain or a mixture of rye and wheat grain. The grain is dehusked, 50 to 80 % of the bran being removed, the germ and aleurone layer being retained. The grain is divided into three portions, each of which undergoes soaking and dispersion. Dough is prepared in three stages. In the first stage, the first portion of grain is used to make dough by mixing the grain with a quantity of yeast equal to 0.2-0.6 % by weight of the first portion. The dough is then allowed to ferment. In the second stage, the second grain portion is introduced following dispersion to the finished dough prepared during the first stage and dough is prepared from the resulting mixture using a quantity of yeast equal to 0.7-1.5 % by weight of the dough, which is then allowed to ferment. In the third stage, the third grain portion and salt is introduced following dispersion to the finished dough prepared during the second stage and dough is prepared from the resulting mixture using a quantity of dough equal to 0.2-0.6 % by weight of the dough. The dough is then immediately divided up, allowed to stand and baked.
