Abstract:
A process for safely and easily producing a polyphenol-containing composition; and a process for producing a polyphenol. A polyphenol-containing solution is brought into contact with a specific polysaccharide to deposit the polyphenol on the polysaccharide. Thus, a polyphenol-containing composition utilizable also as an additive for foods or beverages can be obtained. The polyphenol can be purified by bringing the polysaccharide having the polyphenol deposited thereon into contact with a solvent to elute the polyphenol with the solvent, removing the solvent, and then powdering the polyphenol.
