Abstract:

This invention provides a process for producing a DFA III crystal, characterized in that a solution containing difructose dianhydride III: DFA III, that is, a hardly digestive disaccharide comprising two fructose molecules bonded to each other at 1,2’;2,3’ (di-D-fructofuranose-1,2’;2,3’ dianhydride), has a pH value of not less than 5, preferably 5 to 8, more preferably 6 to 8. According to the production process, DFA III can be produced on a commercial scale without lowering the crystallization rate even when crystallization is carried out in a circulatory system. In this case, the effect is further enhanced, when the total fructose content of (crude) crystallization mother liquor is not more than 5% on a solid basis and the fructose content is not more than 5%.
