Abstract:
It is intended to provide synthetic reaction conditions for producing edible sterol fatty acid esters having physiological activities from plant-origin sterols and fatty acids or fats and oils by using lipase as a catalyst, and edible sterol fatty acid esters which are excellent in functional qualities (color, smell, taste, etc.) in the subsequent refining stage and have a high safety. A process for producing edible sterol fatty acid esters from plant-origin sterols and fatty acids or fats and oils containing triacyl glycerol as the main component by using lipase as a catalyst, characterized in that the reaction of synthesizing the sterol fatty acid esters with the lipase is performed in a system having a definite moisture content at a definite temperature for a definite period of time followed by the inactivation of the enzyme, dehydration and elimination of enzyme proteins, and, after eliminating the unreacted sterols and fatty acids by molecular distillation, colorant components are eliminated by treating with an adsorbent and odor components are eliminated by steam distillation.
