Abstract:
Provided is a fat which rapidly melts (in the mouth), has satisfactory compatibility with cocoa butter, and has a low trans-fatty-acid content and which is usable as non-tempered hard butter that is of a non-lauric acid type. Also provided is a process for producing the fat. Either a fat (A) which comprises a first non-lauric fat comprising 50-100 mass% SUS-type triglycerides and a non-lauric transesterification oil containing 12-38 mass% SSU-type triglycerides or a fat (B) obtained by hydrogenating the fat (A) is fractionated to obtain a soft part.
