Abstract:
Disclosed is a process for producing fermented tapioca starch for baking, wherein tapioca starch is used as the main raw material, a specific amount of carbon-source-specific strains is added, and the structure of the starch is improved through actions such as fermentation combined with illumination. The addition of the fermented tapioca starch achieves the functions of increasing the volume of gluten-free mochi bread, enlarging the bread pores, and improving the texture of the bread structure.
