Abstract:
It is intended to provide food additive compositions in the form of slurry which are highly excellent in re−dispersibility in a liquid and dispersion stability over a long time, and powdery compositions thereof. Namely, a process for producing a food additive composition in the form of slurry which contains a polyvalent metal, phosphate ion, an organic acid having carboxyl and an alkali metal, characterized by comprising preparing a precursor by mixing water, a polyvalent metal compound and the organic acid having carboxyl and then adding a phosphate source and the alkali metal thereto.
