Abstract:
A process for producing loaf bread which comprises, in the step of adding potassium bromate in preparing a bread dough, adding an aqueous potassium bromate solution so as to improve the solubility of the potassium bromate thus added in the bread dough and promote the chemical decomposition of bromic acid,and further adding ascorbic acid optionally together with ferrous sulfate to thereby prevent bromic acid from remaining in the loaf bread after baking. The loaf bread produced by this process is advantageous in that, though potassium bromate serving as an excellent bread improving agent is employed, no bromic acid remains in the baked loaf bread and the flavor and taste of the bread are never affected thereby.
