Abstract:
Disclosed is a process for producing an oil-and-fat that is rich in a di-saturated mono-unsaturated triglyceride that has two saturated fatty acid residues and one unsaturated fatty acid residue (an X2U-type triglyceride), which comprises fractionating an oil-and-fat containing the X2U-type triglyceride in an amount of 20 to 60% by mass relative to the total amount of all of triglyceride compounds in the presence of 1 to 50% by mass of a fatty acid lower alkyl ester component comprising an unsaturated fatty acid lower alkyl ester in an amount of 10 to 100% by mass. The process is more efficient and suitable for the industrialization of the fractional production of an oil-and-fat that is rich in a di-saturated mono-unsaturated triglyceride (an X2U-type triglyceride).
