Abstract:
Disclosed is a process for producing a canned product, which comprises filling a content in a can, filling liquid nitrogen in the can, hermetically sealing the can, and subjecting the can to a hermeticity test, wherein the temperature for filling the content is 30 to 50˚C and the internal pressure of the can is 0.3 to 1.0 kPa on average with the standard deviation being 0.12 or less.
The process is particularly suitable for cases in which the content is a low-acidic beverage containing a milk component, such as a milk coffee, and the content is filled and is subjected to retort sterilization.
