Abstract:
Disclosed is an excellent process for producing reduced glutathione by the electrolytic reduction of oxidized glutathione.
In a process for producing reduced glutathione by the electrolytic reduction of oxidized glutathione using a cathode vessel and an anode vessel separated from each other with a septum, reduced glutathione is produced using an aqueous oxidized glutathione solution containing an electrical conducting agent other than an acid and having a pH value of 2.0 to 3.0 in the cathode vessel.
