Abstract:
A process for sterilization and production of a fish meat paste product with the use of microbubbles, characterized in that it comprises the steps of adding microbubbles containing ozone gas generated in water to a raw material for fish meat paste product; coating the circumference of the microbubbles containing ozone gas with tissues of the raw material for fish meat paste product to thereby sustain the duration of the microbubbles containing ozone gas; and stimulating the microbubbles containing ozone gas to thereby rupture the shell of coating provided on the microbubbles containing ozone gas. There is further provided a sterile fish meat paste product produced by the process.
