Abstract:
The invention discloses a process for synthesizing sucralose, which comprises reacting sucrose with acetic anhydride in N-amide solvent in the presence of organic complex alkali metal salt catalyst to form sucrose-6-acetate, then chloridizing and acetyl-removing to obtain sucralose. The invention also discloses a process for purifying sucralose, which comprises purifying crude sucralose with one or more organic solvents to obtain purified sucralose.
