Abstract:
In the field of producing processed foods containing a cereal powder, there have been required foods having good appearance, good physical properties, good taste and good functionality. A processed food having good appearance, good functionality and good taste can be produced by roasting cereal seeds such as hard rice grains, cooking the same together with various kinds of side materials to thereby enrich a coloring agent, dietary fiber, glucose and so on, then drying and maturing the cooked product and grinding.
