Abstract:
A processed wheat flour food compounded with bilberry excelling in safety and cost and capable of stably coloring of processed wheat flour food to bluish purple; and a relevant method of coloring the same. There is provided a processed wheat flour food compounded with bilberry, characterized in that bilberry is added in an amount of 5 to 30% based on the weight of whole material so as to color the processed wheat flour food to bluish purple. Further, there is provided a method of coloring processed wheat flour food by bilberry compounding, characterized by including the harvesting step of picking bilberry, freezing the same and removing foreign matter; the processing step of after the harvesting step, crushing the frozen bilberry, adding flavor and sugar ingredients and mixing them; the storing step of after the processing step, packing the resultant bilberry by given amounts, sterilizing the packed bilberry, subjecting the same to a metal detector and effecting refrigerated storage; and the utilization step of after the storing step, thawing the bilberry and blending the same with processed wheat flour food.
