Abstract:
The processing apparatus (1) for linoleic acid-containing foods of the present disclosure is provided with: a pot section (2), which holds the linoleic acid-containing food and water and the upper surface of which is open; a lid section (3), which is disposed on the opening of the pot section (2); heating units (12, 13, 18) for heating the inside of the pot section (2); and a control unit for controlling the heating units. The control unit performs a pre-heating process of heating the substance to be heated inside the pot section (2) for a specified period at a temperature at or below the lipoxygenase inactivation temperature. The present disclosure is able to effectively increase oxo-ODAs.
