Abstract:
The present invention relates to a production method for a coffee-flavoured drink using soybeans. The invention comprises: a fat removal step in which fat is removed from soybeans by heating under pressure; a roasting step in which the soybeans, which have undergone the fat removal step, are heated for between 1 hour and 3 hours at a temperature of between 180°C and 240°C; an extraction step in which, following the roasting step, the roasted soybeans are ground and then mixed with water in a ratio of 100 parts by weight of roasted soybean to between 1,000 and 3,000 parts by weight of water, and then the mixture is held at a constant temperature of between 60 and 90°C for between 1 and 3 hours in such a way as to extract a liquid ingredient for a coffee-flavoured drink from the roasted soybeans; and a freeze-drying step in which a granular product is produced by freeze-drying the extracted liquid ingredient for a coffee-flavoured drink, at a temperature of between 10°C and 40°C below zero and at a pressure of between 20 and 100 mmHg. The present invention has the advantageous effects that it can provide a drink which has a coffee flavour comprising a taste and aroma equivalent to or better than conventional coffee even though coffee is not used as an ingredient and side effects due to caffeine can be prevented, and that it can prevent dissipation of foreign currency by using domestically grown soybeans instead of importing coffee ingredients.
