Abstract:
It is intended to provide a method of producing an instant dry food whereby an instant dry food, which can be reconstituted so as to give a good texture and a savory taste being comparable or even superior to fresh-cooked cereals, can be produced in a small number of steps by using an inexpensive and simple device, and a drying device to be used in producing this instant dry food. The above-described method of producing an instant dry food comprises: the gelatinization step of gelatinizing starting cereals to give gelatinized cereals; the water-adding step of pouring water to the gelatinized cereals to thereby increase the water content of the gelatinized cereals to a definite level; the freezing step of cooling the gelatinized cereals having been treated in the water-adding step to the freezing point or lower; and the drying step of passing hot water through a heat pipe, contacting an air stream with the heat pipe and then blowing the hot air stream thus obtained to the gelatinized cereals having been treated in the freezing step to thereby dry the same.
