Abstract:
Provided is a production method that is for a fermented malt beverage, and that inhibits a rapid increase in transmembrane pressure difference and enables a filtration operation to be performed for an extended period of time, even though the method comprises a cross-flow filtration step which uses a ceramic membrane filter. This production method for a fermented malt beverage comprises performing cross-flow filtration on a fermented liquid containing malt as a raw material. The cross-flow filtration is performed by passage through a monolithic ceramic membrane filter which is disposed apart from a flow path of the fermented liquid, is equipped with slits having an opening on a side surface thereof, and has a membrane pore size of 0.6-0.9 μm. The fermented liquid contains a silica gel having a loss on drying of 40% or more.
