Abstract:
The objective of the present invention is to provide a production method for purified palm oil and fat wherein the contents in 3-chloropropane-1, 2-diol, and fatty acid esters thereof have been reduced. The present invention provides a production method for purified palm oil and fat, comprising an alkaline deacidification step whereby a crude palm oil is alkaline-deacidified. One or more among a degumming step, a decolorization step, and a deodorization step may be included after the alkaline deacidification step. The decolorization step may be included after the degumming step and the deodorization step may be included after the decolorization step.
