Abstract:
Disclosed is a protein fiber production method comprising a step for bringing a spinning stock solution containing protein and an organic solvent into contact with a coagulating solution to congeal the protein, wherein the protein content in the spinning stock solution exceeds 10 mass% based on the total amount of spinning stock solution, and the coagulating solution contains water or an aqueous solution having a pH between 0.25 and 10.00 inclusive.
