Abstract:
The production method for a puffed grain snack according to the present invention comprises the steps of: grinding dried grains to a particle size of from 0.1 to 2mm; forming the ground grains into a gel by fusing the grains at a temperature of between 90 and 180°C and a pressure of between 10 and 50 kg/cm2; and puffing the gelled grains by discharging it rapidly at ambient temperature and atmospheric pressure. Thus, the method of the present invention can produce the puffed grain snack in a simple fashion at a relatively low temperature, with only pure grains and without flour, and minimizing the loss of nutrients
