Abstract:
Anhydrous sodium acetate free from sour odors which can be added to processed foods in such an amount that it can sufficiently produce its bacteriostatic effect. Also provided are: a process for producing purified anhydrous sodium acetate, characterized by treating anhydrous sodium acetate with an organic solvent or hydrous organic solvent and then removing the organic solvent or hydrous organic solvent; a preparation for foods which contains the purified anhydrous sodium acetate; and a food to which the preparation has been added.
