Abstract:
The objective of the present invention is to find a lipase that is derived from a microorganism and suitable for random transesterification and to provide a highly practical random transesterification method for fats and oils. Specifically provided is a random transesterification method for fats and oils, in which a lipase that is derived from a microorganism belonging to the genus Geobacillus is used.
