Abstract:
The purpose of the present invention is to provide a reduced calorie fruit juice beverage, vegetable juice beverage, and mixed juice having the richness and full-bodiedness inherent to the beverage; and a method for manufacturing the same. The present invention provides a fruit juice beverage, vegetable juice beverage, and mixed juice beverage characterized in that the saccharide concentration and the Brix value satisfy a prescribed formula. The present invention also provides a method for manufacturing a reduced calorie fruit juice beverage, vegetable juice beverage, and mixed juice beverage including a step for performing enzyme processing on a fruit juice, vegetable juice, or mixed juice using a sucrose-based glycosyltransferase and then performing a membrane filtration process at the same time as and/or after the enzyme processing.
