Abstract:
The present invention provides a rice-derived sweetener which suppresses crystallization. A rice-derived sweetener containing a rice-derived component, glucose, and one or more types of saccharide selected from panose, maltotriose and isomaltotriose, wherein the content of the glucose relative to the total mass of the rice-derived sweetener is at least 4.0 mass% and less than 47.2 mass%, and the total content of the panose, maltotriose and isomaltotriose is more than 1.96 mass% and no more than 16.00 mass% relative to the total mass of the rice-derived sweetener.
