Abstract:
Provided are a rice gel production system and a rice gel production method that enable mass production of rice gel of high quality and high palatability. This rice gel production system for producing a gelatinous rice gel RG is provided with: a rice cooking part in which raw material rice is cooked or steam-cooked to obtain cooked rice R; a cooked rice transfer part which transfers the cooked rice R; and a crushing part 7 which crushes the cooked rice R delivered from the cooked rice transfer part so as to obtain rice gel. The crushing part 7 is provided with: a first crushing portion 100A for crushing the cooked rice R to obtain first crushed rice Ra; and a second crushing portion 100B for crushing the first crushed rice Ra discharged from the first crushing portion 100A so as to be crushed more finely than the first crushing portion 100A does.
