Abstract:
The present invention relates to a saltiness-enhanced natural seasoning using soybean and gluten and a production method thereof. The present invention has the effect of providing a saltiness-enhanced natural seasoning as a result of producing a natural seasoning in optimized conditions by setting a mixing ratio of soy protein and gluten in the saltiness-enhanced natural seasoning and by setting hydrolysis conditions. In addition, the present invention has the excellent effects of, by using soybean, enhancing the value of seasoning in terms of nutritional, functional, and qualitative aspects and maximizing the utilization of soybean.
