Abstract:
To provide a refined sesame oil rich in lignans which have various excellent physiological effects, it is intended to obtain a refined sesame oil from sesame seeds having a large lignan content. A refined sesame oil characterized by having a sesamin content of 1% by weight or more and showing no bitterness; a process for producing this sesame oil characterized in that active carbon is used as an adsorbent in the decolorizing step; a process for producing the above sesame oil characterized in that the decolorizing temperature is controlled to 5°C to 70°C in the decolorizing step with the use of active clay as an adsorbent; and a process for producing the above sesame oil characterized in that, in the decolorizing step, 0.1 to 3% by weight of active clay is used as an adsorbent and the decolorizing temperature is controlled to 5°C to 70°C.
